Baked Potato Skins

Hey followers,

So the other day I was watching Paula Dean on The Food Network. Personally I don't usually watch The Food Network. But in the past two weeks my cousin has been watching it non-stop... so basically I was forced to watch it.


She was baking Potato skins. I have had them once from the grocery store already made just to be heated up. They were amazing. So I figured that if I made my own they would be even better.

And they were.


Thank God they were because I burnt my fingers twice in the process... It happens!

Especially when your as clumsy as me...

Well anyway here is the recipe! I hope you enjoy them as much as I did!!

Baked Potato Skins
Ingredients:
Potatoes, baked
3 tablespoons vegetable oil
1 tablespoon grated cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon pepper
Bacon, cooked and crumbled
Shredded cheddar cheese 
Sour cream

1. Preheat oven to 475 degrees Fahrenheit. Cut potatoes in half lengthwise; Scoop out pulp, leaving 1/4 inch shell. Place potato skins on a greased baking sheet.
2. Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper; Brush over both sides of skins. Bake for 7 minutes; turn. Bake until crisp, about 7 more minutes. 
3. Sprinkle bacon and cheese inside the skins. Bake 2 minutes longer or until cheese is melted. Top with sour cream. Serve immediately.

Coconut Swirl Brownies

Heyy people,

So the other night my cousin (Brooke at whatbakesmehappy.com) and I decided we wanted to pull off an all-nighter.

Nope. That didn't turn out the way we hoped. Asleep at 1:00 A.M. Um... yes.
Anyways, it was about 11 P.M. and we felt like we wanted to bake! As I was going through a cookbook these delicious Coconut Swirl Brownies caught my eye! My cousin on the other hand baked some yummy cherry cake pops....

I only ate about 3 of her cake pops.

HA! Just kidding I ate all of them....

So once these amazing brownies were finished, I ate them!

Even though I wasn't supposed too...shhhh!!

They were mouth-watering and extraordinary!!

I was going to bake something new next but my family loved them so much I have to make them again. Gosh, I am such a kind person to make them again for them. So much work.

Here you go! Enjoy and happy eating! 



Coconut Swirl Brownies
Brownie Ingredients:
6 oz semisweet baking chocolate
1 cup butter or margarine
2 cups sugar
2 teaspoons vanilla
1/2 teaspoon salt
4 eggs
3/4 cup all purpose flour

Coconut Swirl Filling ingredients:
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon coconut extract
1 egg
3/4 cup flaked coconut

1. Heat oven to 350 degrees Fahrenheit. Line 9-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; Spray foil with cooking spray.
2. In 3-quart saucepan, melt chocolate and butter over medium-low heat, stirring constantly. Remove from heat. Stir in 2 cups sugar, the vanilla and salt. Add 4 eggs , one at a time, stirring with whisk until blended. Spread batter in pan.
3. In medium bowl, beat cream cheese and 1/3 cup sugar with electric mixer on medium speed 1 minute or until light and fluffy. Beat in coconut extract and 1 egg until blended. Stir in coconut. Drop mixtures by table spoonfuls into batter, placing each spoonful in different places; Swirl coconut mixture through brownie with knife for marbled design.
4. Bake 45 to 50 minutes or until set. Cool completely in pan on cooling rack, about 2 hours. Use foil to lift out of pan. Cut 5 rows by 4 rows. Store in refrigerator.

Welcome!!

Hey there bloggers,

I have decided I wanted to share all of my cooking and baking successes with you!!

You should probably know right off the bat that I am a bottomless pit!! I eat a ton. Way too much to be even near normal! So this should be easy. Just bake the food, take a picture or two, then blog about the food with the recipes and a back story, then...DIG IN!!

I can already tell this is just going to be just the greatest experience for me!

The good thing for me is that I am a gymnast. So I can eat a lot without gaining pretty much any weight at all because I work out 5 days a week! Also I got the fast metabolism from my Dad, So...

Life is good!!

Honestly I have no idea how I could live without being able to eat like an elephant everyday!!

Okay I guess I should stop blabbering over here in lala land and get to what this message is all about. My blog. On my blog i will be posting recipes and pictures of the food I cook and bake. Also I will add a back story to that post as well. And lastly knowing me there will probably be a few posts about my basic life...that is if it's even interesting at the moment.
